Healthy (Vegetable) Bieler Broth
Henry G. Bieler, MD (1883-1975) was widely recognized as a pioneer of holistic medicine using diet-based therapies. One of his many innovations was a soup to support immune function that came to be called the “Bieler Broth.” This can be very useful when following a simple diet while acutely ill or recuperating. Many modifications can be made to this very general recipe.
Begin with 1 quart of water, and add:
4 Medium squash (zucchini, yellow or acorn squash)
1 pound green beans (ends removed)
2 stalks of celery
1-2 bundles of fresh parsley (finely chopped, with stems removed)
Optional: Fresh herbs such as; thyme, tarragon
Chop vegetables to suit individual needs and place in stainless steel pot. Bring to a boil, and then reduce heat to a simmer for 30 minutes. More water may be added if desired, and the tonic can be pureed once cooked, which assists with digestion.
