Strawberry-Basil Lemonade from Nourish Me Kitchen

MAKES 5 CUPS

3 cups cold water, plus a few tablespoons of hot water

3 to 5 tablespoons honey

¾ cup fresh lemon juice(6 to 7 lemons)

15 large strawberries (about 2 cups)

1 tablespoon chopped fresh basil and/or mint

Liquid stevia (I usually add about 10drops in addition to the honey)

 

DIRECTIONS:

1. In a small cup, add just enough hot water to the honey to dissolve it. Transfer to a blender along with the rest of the ingredients and blend well on low to medium power until the basil is pulverized completely. (Blending on high power will cause the lemonade to foam too much.)

2. Alternatively, for a smoother consistency, blend the dissolved honey and all of the remaining ingredients except the basil until smooth. Strain the lemonade through a fine-mesh sieve. Gently muddle the basil in individual glasses with the back of a wooden spoon, then add ice and pour in the strained lemonade.

3. Adjust the sweetness as desired and serve immediately, as the solids will settle quickly. If making in advance, stir or blend before serving.
