Turmeric and Yogurt Chicken Kabobs

Curcumin, the main ingredient in Turmeric is a neuro-protective antioxidant that can protect against Alzheimers when consumed regularly.  This recipe for Turmeric and Yogurt Chicken Kabobs highlights the great taste and color of Turmeric. 

 

Marinade:

I cup of plain yogurt (substitute your favorite non-dairy yogurt)

1 tablespoon grated ginger

1 tablespoon paprika

1 tablespoon of vegetable oil

2 teaspoons minced garlic

2 teaspoons sea salt

1.5 teaspoons ground cumin

1 teaspoon ground turmeric

0.5 teaspoon ground cayenne pepper

In a blender or food processor, combine marinade ingredients and blend until smooth.

 

3 boneless, skinless chicken breasts, about 6 ounces each, cut into 1.5 inch pieces

1 pint of grape or cherry tomatoes

1 medium green bell pepper, seeded and cut in 1.5 inch squares

1/2 a medium red or yellow onion, cut in 8 wedges and seperated

 

Place chicken pieces and marinade in plastic sealable bag. Turn and distribute evenly over chicken. Place in bowl and refrigerate for 2 to 4 hours. 

Remove chicken from bag and thread onto wood or metal skewers alternating with tomatoe, bell pepper, onion, and chicken. Discard remaining marinade.

Grill skewers over direct medium heat for 8 to 10 minutes, turning once. 

Makes 4 servings. Delicious with hummus.
